My first encounter with sweet potato dumplings was at Mathew Manor for a wedding tasting, and it sure left an impression! I immediately fell in love with them, and I guess curiosity killed the cat! A quick trip around Google Land, and I gathered enough information to create my own special sweet potato dumpling recipe.

Now, I am not trying to make you a sweet potato expert, but it would be nice to know some interesting facts about this sweet vegetable. And hey! Now you know what to chat about with the lucky lady or gentleman who will catch your heart during the holiday gathering. But on a serious note, check out these interesting sweet potato fun facts:
- February is national sweet potato month.
- Christopher Columbus crew members were the first to taste sweet potatoes on his expedition in 1492.
- Although sweet potatoes are usually orange, you will sometimes catch them in different colors such as pink, yellow, red, violet, and purple.
- Sweet potatoes are very filling and rich in vitamins and fiber.
- You can eat your sweet potatoes fried, steamed, boiled, or baked. You can also try them as a smoothie!
