Can you believe Summer 2022 is almost over? I get so excited to plan any special event and I am thrilled to share some of my tips and recipes from my summer classes at the Gardendale Library.
“Oceans of possibilities” is this summer’s Library theme at Jefferson County, Alabama. Therefore, I’ve decided to make the theme “Let’s See what we can cook up with a box cake mix” contest.
There are many possibilities when it comes to cooking and entertaining. I love how you can create so many delicious desserts from a cake mix box. Altogether, we had a wonderful time with our contest creations!

As a food enthusiast, I’m always eager to learn, create and cook new recipes. One morning in Walmart while running errands, I’ve encountered another customer and started talking about baking.
She was so kind for giving me a recipe for a butter pecan cake with frosting that I prepared in my class at the library later on.

Reduce the oil quantity to ½ cup or even cup ¾ if you don’t like super moist cakes.
Grease your cake pan well. Pay extra attention to this step as its crucial for obtaining a solid one-piece cake.
Get creative and create a glaze with pecans.
Go an extra mile and toss the pecans in a flour bowl before adding them to the mixture so they don’t sink and are evenly distributed.
Bring the ingredients to room temperature, especially eggs. This will allow the mixer not to overwork the batter.

How To Make the Butter Pecan Cake?
Preheat the oven to 350°F, and spray the Bundt pan with Baker’s Joy or Pam Baking spray, or simply sprinkle flour all over it.
In a large bowl, combine the cake mix, water, vegetable oil, eggs, and frosting. Mix all ingredients well together with a cake mixer or your hands.
Pour the batter into the Bundt pan and bake for 45-50 minutes.
Allow the cake to cool in the pan for 10 minutes before removing.
