This 4-ingredient no-peek chicken recipe is incredibly simple to prepare and delicious to eat. This recipe uses only four simple ingredients and is ideal for quick dinners on a budget. No peek-chicken casserole is perfect for a weeknight family meal.

Ingredients
  

  • 1 pound skinless boneless chicken tenderloin
  • 2 cans Cream of Chicken Soup (10.5)
  • 2 cups chicken broth
  • 2 cups regular white rice, uncooked

Instructions
 

  • Preheat the oven to 350º Fahrenheit.
  • Spray a 9x13-inch glass baking dish lightly with Pam cooking spray.
  • In the glass baking dish, mix together the rice, chicken broth, and cream of chicken soup.
  • Place the chicken on top of the rice mixture.
  • Cover tightly with aluminum foil and bake for 1 hour and 30 minutes.

Notes

  • You can prepare your own handmade cream soups if you don't want to use canned cream soups.
  • You can use other types of rice in this recipe as long as they are long-grain. Short grain will become mushy if overcooked.
  • Refrigerate leftover no-peek chicken in an airtight container for up to three days. Reheat leftovers in the oven or microwave.
