Lemon Blueberry Pound Cake
A delicious sweet cake with a tang and elevated flavor and texture.
- 6 large Eggs
- 3 cups Granulated sugar
- 3 stick Melted butter
- 3 cups Cake flour
- 1 tsp Baking powder
- 4 tsp Lemon extract
- 2 tbsp Lemon juice
- 2 cups Fresh or frozen blueberries
- 3 tbsp Sour cream
- 4 tbsp Miracle whip
Glaze
- 2 cups Confectioners’ sugar
- 4-6 tbsp Heavy whipping cream
- 2-3 tbsp Lemon juice
- Lemon zest optional
Melt butter and set it aside.
Beat eggs one at a time.
Add sugar one cup at a time, as you mix with eggs
Add cake flour and baking powder
Add lemon extract and lemon juice.
Add sour cream and miracle whip.
Fold in Blueberries.
Spray tube cake pan baking spray and bake at 325 °F for 1 hour and 30 minutes.
Cool the cake, serve, and enjoy.
