Cheesy Sausage Potato Casserole

  • 6-8 Russet Potatoes
  • 1 stick butter melted
  • 1 lb ground beef
  • 1 lb ground turkey
  • 4 Roger Wood Smoked Sausage links
  • 1 16oz Velveeta Cheese
  • 2 cups shredded cheese
  • Salt, Pepper, and Crushed Pepper To taste


  • Preheat oven to 350F
    Wash and peel potatoes. Cut potatoes into quarter size slices.  Boil until fork tender.  You want them a little under cooked because they will cook more in the oven.  Drain water from potatoes and pour melted butter over potatoes. 
    In a skillet cook ground turkey and beef over medium heat until brown.  Make sure you drain grease from meat.  Add sliced sausage in a skillet and stir frequently until brown.  Cut Velveeta cheese into cubes.
    In a baking dish add a layer of potatoes, Velveeta cheese, ground meat and shredded cheese on top, repeat this step until all ingredients are used. 
    Bake on 350 for 25-30 minutes or until cheese is melted 
    ** You can season both ground turkey and beef with seasonings of your choice
