Happy Thankful Thursday!!

Spring is here and it’s almost time for backyard bbq’s and lemonade!!! I wanted to get a comfort recipe in before the weather gets really warm!   

We all need a recipe Rolodex with some quick and easy recipes for dinner.  My chicken pot pie is here to save the day.  Who doesn’t love chicken pot pie? It is so rich, creamy, and just down right delicious!! My recipe is loaded with chicken, vegetables, and ready made pie crust. It is a perfect recipe for comfort food and easy to make.  You can even freeze this simple and easy recipe!

3 chicken breast

1 can of corn

1 can of green beans 

1 can of carrots

1 can of diced white potatoes 

1 large can of family size of cream of chicken 

1 2pack of pre-made pie crust 

Season chicken with your favorite seasonings and bring chicken to a boil.  I usually boil my chicken in chicken broth or and water.  

After chicken is done, allow it to cool and cut up in small pieces or shred it.  Open vegetables and drain juice off the vegetables. Mix all vegetables, chicken, and cream of chicken together in a boiler. Pour mixture in pie crust and cut your second pie crust in pieces and lay on top.
Bake pie for 45 minutes to an hour on 350 or until crust is golden brown.

  1. Chicken pot pie is my fave!!!! I never made it with canned ingredients before but looks so convenient – I need to try this version!
